L’ORIGINAL
This vinegar is refined in Cognac barrels which give a well-balanced acidity, soft, light with fruity flavours. Do not hesitate to cook it with white meats, fishes and shellfishes. Try it as ingredient to twist cocktails.
LE FUMÉ
The unique smokey, ashy, bacon flavours of this vinegar come from the ‘crocodile’ wood which has been exposed longer to the cooper’s fire. It is a characterful vinegar and perfectly highlights the flavours of shellfish, ‘meaty’ fish and red meats.
LE VÉGÉTAL
Refining in acacia barrels makes it possible to produce a vinegar with a floral and herbaceous taste. Its vegetal profile is perfect for enhancing soups, risottos and vegetables.

Since the 18th century, at the end of the distillation period, local grapes have been used to produce vinegar and traditionally aged in old cognac barrels.
